This is one of my favorite recipes. Family members said they always hated cranberry sauce, ask for this at Thanksgiving and Christmas.
1 1/2 cups water
2 cups sugar
3 cups clean, picked over cranberries
1 medium orange, chopped fine
1 teaspoon ground ginger
dash of cinnamon
dash of cloves
dash of cardamom
1. Wash cranberries and pick through for any stems or stones. Peel and finely chop the orange.
2. Combine the sugar with the one cup of water in a medium sized saucepan and heat until the sugar dissolves. Add cranberries, cover, and simmer for ten minutes, uncover, and simmer for another ten minutes. Stir occasionally.
3. Add the remaining 1/2 cup of water, chopped orange, ginger, cinnamon, and cardamom powder, then simmer for 20 minutes, stirring often. Chill the sauce. (It will thicken a bit after it is cold.)
