Coconut Frosting

3 oz softened cream cheese
3 tbs softened unsalted butter
1/3 cup confectioner's sugar
3 tbs cream of coconut
1 tsp dark rum
1/3 cup sweetened coconut flakes

Make sure you do not use coconut milk. Cream of coconut is a totally different product.

This one is so easy! Combine all the ingredients and beat them until they come to the right consistency. These are great on chocolate cupcakes with some chocolate drizzled on top. They come out a lot like Mounds candy bars. Mmmmm.
